Absolutely Irresistible Freekeh Sliders
If you think veggie burgers are boring, think again! These black bean freekeh sliders are anything but dull. Packed with flavor and perfect for sliders or full-sized patties, they're a must-try for any burger lover. Plus, don't forget the creamy avocado crema!
Recipe:
Chipotle Black Bean Freekeh Sliders with Avocado Lime Crema
Ingredients:
- 1/4 cup cracked freekeh
- 3/4 cup water
- 1 15-ounce can black beans, drained
- 1/2 medium red onion, finely diced
- 2 garlic cloves, minced
- 1/2 cup corn kernels
- 1 tablespoon chipotle chili powder
- 1/2 teaspoon cumin
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fine ground cornmeal
- 2 tablespoons olive oil
- 1 medium avocado
- 1/2 cup Greek yogurt
- 1 teaspoon lime juice
Instructions:
- Combine the freekeh, water, and a pinch of salt in a medium saucepan. Bring to a boil, then reduce the heat to a simmer and cook for approximately 10-12 minutes, stirring occasionally, until all the water has been absorbed. Remove from the heat and set aside to cool completely.
- In a medium bowl, mash the black beans until pasty. Add the cooled freekeh, onion, garlic, corn, chili powder, cumin, paprika, cayenne, salt, and black pepper. Mix until all the ingredients are incorporated.
- Scoop out about 1/3 cup of the black bean-freekeh mixture and shape into burgers using your hands. Repeat with the remainder of the mixture. Cover and refrigerate for at least 1 hour.
- Remove the sliders from the refrigerator and lightly dust the top and bottom of each with a thin coating of fine ground cornmeal. Heat 2 tablespoons of oil in a large skillet. Cook the sliders until golden brown on both sides.
- Meanwhile, prepare the avocado crema by blending the avocado, Greek yogurt, lime juice, and a pinch of salt until smooth and creamy. Refrigerate until ready to serve.
- Assemble the burgers with slider buns and your favorite toppings.
